Weekend Eats: Saturday February 23, 2019
Happy Sunday friends! It's a gloomy, blustery day here in Michigan, but I'm not letting that get me down! This morning, I woke up, read a little, and headed to a workout (two days in a row!!!).
Anyway, I thought it would be fun to share with you all everything I ate yesterday and why. I think sometimes when we see certain people in the health and wellness space only posting the healthy things they eat, it can be discouraging! So by sharing everything I ate with you yesterday, hopefully it takes some of those feelings away:) Let's get started!
I started my day like I do most days, by making my blended coffee! All it is is coffee, coconut cream, and Great Lakes gelatin, blended in the blender. This frothy dream has the perfect amount of healthy fat and protein so this is usually all I will have in the morning. Occasionally, if I am feeling hungry between this and lunch, I will definitely honor my body's hunger signals and get something to eat! Yesterday, this was all I needed before my workout.
After I kicked some booty at my workout class, Justin made us some lunch around 1:00! Chorizo, an egg, some sweet potatoes, and radishes! The chorizo is no whole30 or even that great of quality... It has some fillers like soy and cornstarch in it. But, we don't have it all that often, so I don't sweat it! If you are thinking, "Is that all Maddie ate after her grueling workout? That does NOT seem like enough food!", you are 100% correct! As soon as I finished this plate of scrumptious food, I drank some water and checked in with my body, and I definitely needed more food!
So, I decided to cut up a green apple and have it with Trader Joes peanut butter! This is my favorite snack and it was the perfect addition to my lunch. Once I was finished with this, I felt satiated and full. A great feeling!
After Justin and I cleaned the entire house and hit up Trader Joes for some groceries, I was feeling a little hungry and it wasn't dinner time yet (like 5:15). So I poured myself some GTs Trinity kombucha (I drank the whole bottle) and had the last two slices of sweet potato snack bread with some Kerrygold butter on top! It was the perfect snack to tide me over until dinner which was around 6:30.
On the topic of dinner, Justin made us some bomb Italian style lettuce wraps with some home fries and Primal Kitchen's Ketchup! Typically, we don't have condiments like Whole30 ketchup on hand, but this was leftover from our Whole30, so I figured why not have some! In the wrap, there was prosciutto, turkey, radishes, banana peppers, provolone cheese, mayo, tomatos, and Annie's Italian Dressing. It was PERFECTION. As a previous Jimmy John's employee, Justin knows how to wrap.
To end the night on the right note, we decided to go pick up some ice cream from TCBY and watch a movie! I ended up with a regular cup of mint chocolate chip topped with dark chocolate, pecans, and peanut butter. I know it sounds weird but this is the only thing I ever get and it is my favorite. I go back and forth between getting a small and regular cup, depending on my hunger level and my mood. This was definitely a regular cup night.
