Instant Pot Italian Sausage and Polenta
Things got a little saucy in my kitchen last night! This may look like fine dining (or it might not...) but don't be fooled. This dish was super easy to make, definitely budget-friendly, and can be easily manipulated to suit your fancy!
Use your favorite tomato sauce, and if you don't want polenta, you can serve over pasta or serve alone! Enjoy!
Italian Sausage and Polenta
5 Italian Sausages
1 jar Tomato Sauce (we used a 24 oz jar)
2 cloves garlic (minced)
1 tube polenta
2 tbsp olive oil
2 tbsp butter
1 tsp salt
1 tsp parsley (garnish)
Set your instant pot on saute mode. Add 2 tbsp of olive oil to the pot. Place sausages into the pot and brown on all sides, roughly 2-3 min per side. Add garlic.
Add the full jar of your favorite tomato sauce to the pot and put the top on. Set to manual, high pressure for 15 min. Make sure to switch the valve to Seal.
Meanwhile, slice the tube of polenta into half inch slices. In a skillet, melt 2 tbsp of butter, on med-high heat. Add slices of polenta, leaving space to flip. Don't overcrowd the pan! Cook until golden on each side, about 3-5 min per side. Once cooked, salt lightly and set aside.
Once sausage is finished, release pressure manually. Plate the polenta with sausage and sauce on top. Top with parsley to garnish!
For this recipe, I used Trader Joe's Barolo Wine Marinara Sauce (I think its new).
